She went back to the country to spend quality time with her grandmother and sister, who was diagnosed with breast cancer.<\/p>\n<p>According to <a href=\"https:\/\/www.bworldonline.com\/partnerships-important-addressing-philippines-double-burden-malnutrition\/\">a study by the Food and Nutrition Research Institute<\/a>, the Philippines has a double-burden case of malnutrition, especially among children, and an increase in cases of overweight and obesity primarily driven by the lack of exercise and having low-quality diets.<\/p>\n<p><strong>\u201cI believe that a plant-based diet will prevent and heal ailments. This is the diet of the future,\u201d<\/strong> says Chef Nancy, who is currently the president of <a href=\"https:\/\/www.instagram.com\/green_leaf_culinaire\/\">Green Leaf Culinaire<\/a> by Institute of Culinary Management, Inc., a group that aims to promote, educate and provide safe, nutritious, healthy and well-balanced meals for children and adults.<\/p>\n<p>In a <a href=\"https:\/\/www.greenpeace.org\/philippines\/press\/2850\/greenpeace-starts-them-out-young-with-activity-in-pasig-connecting-childrens-health-and-nutrition-to-environmental-health\/\">recent activity in Pasig City<\/a>, Chef Nancy, together with Greenpeace Philippines and Sikapin Child Development Center, demonstrated to around 130 parents and guardians some easy to prepare, plant-based meals for their schoolchildren, with an emphasis on easy-to-source ingredients that highlight locally-grown fruits and vegetables.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2989\" src=\"https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-1024x574.png\" alt=\"Mac and squash\" width=\"1024\" height=\"574\" srcset=\"https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-1024x574.png 1024w, https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-300x168.png 300w, https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-768x431.png 768w, https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-2048x1149.png 2048w, https:\/\/www.greenpeace.org\/static\/planet4-philippines-stateless\/2019\/06\/1c2e7a5f-screen-shot-2019-06-23-at-17.11.23-510x286.png 510w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/p>\n<p>When asked how she came up with these three delicious plant-based treats, she said \u201cFirst, I thought of what children like to eat most. The children like chicken nuggets, mac and cheese, and milk teas with pearls. Then I started thinking of replacements. I created the recipes and tested them. That is why I am advocating plant-based meals.&#8221;<\/p><\/blockquote>\n<p>Chef Nancy has been on a plant-based diet for almost two years now, and advocates Meatless Mondays. She joins Greenpeace in calling for cities and schools around the world to adopt sustainable food policies that celebrate plant-rich meals and meat reduction.
